Drunken Shrimp Taco

In Santa Monica, make a date with The Shrimp Pimp and sample a delicious Po Boy Sandwich and Drunken Shrimp Taco.

1 jalapeno pepper, seeded and julienned
1 cup daikon radish, julienned
1 cup carrot, julienned
1 cup orange juice
1/2 cup lime juice
1/4 cup rice vinegar
2 tablespoons sugar

Mix jalapeno, daikon and carrot. Set aside.

Bring a pot of water to boil, and add remaining ingredients. Let boil for 2 minutes.

Remove the mix from the heat and drop into a bowl of ice water to stop the cooking. Drain water and mix in the jalapeno mixture.

Refrigerate for 30-60 minutes.

1/4 cup green onions, chopped
1 teaspoon ginger, grated
1 garlic clove, minced
1 teaspoon sugar
3 tablespoons soy sauce
2 tablespoons water
1 tablespoon rice vinegar
2 tablespoons corn oil
2 tablespoons dry sherry
2 tablespoons corn starch

Mix together all ingredients except corn starch. Place on medium heat in a large frying pan. Reduce until marinade starts to bubble. Mix in corn starch a little at a time while whisking to avoid clumps.
1 pound large shrimp, peeled and deveined
Marinade (see above)
Topping (see above)
4 corn tortillas
Orange slices

Run shrimp under cold water and pat dry. Place the shrimp in marinade and cook through, about 3-4 minutes.

Cover corn tortillas with a damp towel. Microwave on high for 15-20 seconds.

Spoon shrimp on tortilla. Top with cilantro and an orange slice.

Yield: 4 servings
