Prawns 'n' Roses

1 egg
1/4 cup flour
1 box kataifi
16-20 deveined prawns, tail removed (approximately 1 pound)
2 cups grape seed oil
Salt and pepper to taste
4 tortillas
1/2 cup shredded cabbage
1 jalapeno, sliced
1 bunch green onions, sliced

In two separate bowls whisk egg and flour. On a separate plate separate the kataifi into 4-inch strands. Dip prawn in flour then egg. Roll and wrap in the kataifi. Place the oil in a pot and heat on medium high.

When oil is hot, gently add the prawns and cook for 2-3 minutes. When prawns are light golden brown, remove the prawns from the oil.

In a separate pan on medium heat, warm the tortillas one at a time until pliable.

Place 4-5 prawns on each tortilla and top with cabbage, jalapeno, and green onion.


Yield: 4 servings
