Trouble in Paradise

2 bags frozen tater tots
1 tablespoon canola oil
1 cup pineapple (fresh or canned)
1/2 pound bacon, chopped
1/2 cup red onion, diced
1-1/2 cups pepper jack cheese, shredded
1/2 cup kicker sauce (see recipe below)

Deep fry or bake tater tots until golden brown. Sprinkle tots with salt and black pepper.

Heat a large sauté pan until hot. Add canola oil. Add bacon. When bacon is halfway cooked, add onions and pineapple. When bacon is almost finished cooking spread onions, bacon, and pineapple into a thin, even layer, trying to keep ingredients close together. Top with pepper jack cheese.

Once cheese is fully melted, pour kicker sauce over tater tots. Now remove your melted bacon/pineapple/onion/cheese patty from pan and place on tater tots. Dig in and enjoy.

1 cup mayonnaise
1/4 cup ketchup
1/8 cup mustard
2 tablespoons Tabasco habanera sauce

Combine ingredients until smooth.

Yield: 4 servings
