What Zane Eats Sandwich

Recipe from: Caplansky's Deli Truck

A Jewish deli truck out of Toronto, Ontario, serving up classics with a twist such as the WZE Sandwich, featuring grilled kosher-style salami, schmaltz-laced chopped liver, red onions and Russian honey mustard all in a mini challah bun.

2 slices double rye bread
4 tablespoons Elinor’s chopped liver (see below)
5 slices grilled salami, 5mm thick
1/4 cup red onions, sliced in thin rounds
2 tablespoons Russian honey mustard
1 sour pickle

Smear both slices of bread with Elinor’s chopped liver. Grill thick slices of salami. Add grilled salami to sandwich. Add onions. Drizzle Russian honey mustard over salami and onions. Close the sandwich. Should be oozing mustard, fat and liver. Serve with the sour pickle as a sandwich side.

Yield: 1 serving

450 grams beef liver, cleaned of outer skin and veins
1 hard-boiled egg
1/2 cup liquid schmaltz (rendered chicken fat)
1 cup onions, caramelized in schmaltz
Salt and pepper

Cut liver into 1-inch chunks and sprinkle with salt and pepper. Bake liver at 350 degrees Fahrenheit for 40 minutes. Liver should be cooked through, but can be a little pink in the middle.

Purée the liver in a food processor, adding the egg. Drizzle the schmaltz into the processor while still puréeing. Remove from food processor. Stir in caramelized onions. Add salt and pepper to taste.

Yield: 4 servings
