Whole Truck Burger

“Top Chef Canada” competitor Connie DeSousa’s truck serves up some not-so-secret alley delights that include the three patty wonder known as the Whole Truck Burger.

340 grams Angus chuck ground beef
Kosher salt
Ground pepper
3 organic free-range eggs
12 strips bacon
3 sesame burger buns
120 grams Quebec cheese curds
3 leaves lettuce
6 slices heirloom tomatoes
9 slices dill pickles
15 slices jalapeños
6 slices red onions
3 teaspoons Portuguese pepper aioli

Season beef with salt and pepper and form three patties. Cook on grill on high heat until desired doneness.

While beef is cooking, fry eggs sunny-side-up on grill, cook bacon to desired crispiness on grill, and toast buns on grill.

Top beef with cheese curds during final cooking.

Top each burger with 1 egg, 4 strips bacon, 1 leaf lettuce, 2 slices tomatoes, 3 slices pickles, 5 slices jalapeños, 2 slices onion, and 1 teaspoon aioli.

Yields: 3 servings
