Ms. P's Dirty Black Eyed Peas

450 grams peppered bacon, diced
4 cups yellow or sweet onion, chopped
4 smocked ham hocks, scored through the meat and fat
5-6 cloves garlic, chopped
4-5 bay leaves
6 sprigs of thyme
900 grams dried black-eyed peas, soaked in water for at least an hour
18-20 cups unsalted chicken stock
Salt & pepper

In large stockpot over medium-high heat, render down bacon until crispy, about 10-12 minutes.

Add the onions and sauté for 2-3 minutes. Season the onions with just a little salt, as too much salt will cause the black-eyed peas to break up later.

Stir in the ham hocks, bringing them to the bottom of the pan to braise for 3-4 minutes.

Stir in garlic, bay leaves, thyme, black-eyed peas and chicken stock. Bring to a boil on high heat, then reduce to a slow simmer. Cook for about 2-2.5 hours, or until peas are tender.

Remove the pork meat, finely mince it and add back to the peas. Remove thyme leaves and bay leaves.

Yield: 12 servings
