Recipe from: Crepes Bonaparte Truck

Stop in Orange County to flip out on perfect pancakes at the Crepes Bonaparte truck.

Watch the episode
1-1/2 cups flour
2 cups skim milk
4 tablespoons canola oil
4 eggs
2 tablespoons cinnamon sugar
4 Fuji apples, cored and sliced thin
1 teaspoon ground cinnamon
1 can of whipped cream
1/4 cup powdered sugar
1/2 cup caramel sauce

Put flour, milk, canola oil, eggs, and cinnamon sugar into a blender and mix until there are no lumps.

Place apple slices in a frying pan on medium high heat. Sprinkle cinnamon over the sliced apples while they are cooking and let apple slices get nice and soft (approximately 5 minutes).

Heat a 10-inch pan to medium-high and coat it with a tiny bit of canola oil so the crepe won't stick. Pour 1/2 cup of batter onto the pan and turn the pan so the batter coats the entire surface. After 30 seconds flip the crepe over using a spatula to loosen the edges.

Put a large spoonful of cooked cinnamon apples into the center of the crepe. After 30 seconds fold the sides of the crepe over the apples and put crepe onto a plate with the folded side down.

Top with caramel sauce, powdered sugar, and whipped cream.
