“Kicky Sauce”
5 Strips Crisp Bacon

Chicken Sofrito
Roast Chicken Breast
2 Lbs Bone in Chicken Breast
Place chicken in large roasting pan and cover with water and seasoning salt. Put in 350 degree oven and roast for 2 hours. Remove and let cool. Remove chicken from the bone and place in roasting pan with some chicken stock.

2 medium green peppers, seeds removed
1 red sweet pepper, seeds removed
2 large tomatoes
2 medium onions, peeled
1 head of garlic, peeled
1 bunch cilantro leaves
1/2 bunch parsley leaves

Chop and blend all the ingredients in a food processor or blender. Pour into large stock pot and cook slowly over low heat for about an hour. Remove from heat and cool. Add 1 cup of Sofrito to Roast chicken (or more if desired).

Roasted Potatoes
2 lbs Potatoes – Red or White or a combination of both
2 Medium Onions

Cut potatoes and onions into bite sized pieces. Place on sheet pan. Drizzle with Olive oil and cover with seasoning salt. Bake for 12 minutes in 400 degree oven. Remove from oven and stir with spatula. Return to oven and bake 20 minutes or until golden brown.

Kwanza Bowl Assembly

Place roasted potatoes in the bottom of serving dish. Cover with Chicken Sofrito, Cheddar Cheese, and “Kicky Sauce”. Top with crisp bacon and serve.
