Mighty Masala Fish Burger

FISH
1 kilogram coley fish fillets
2 tablespoons garam masala
1 tablespoon dry crushed chilis
2 teaspoons cumin
2 teaspoons coriander seed
1/2 teaspoon fennel seed
1 teaspoon turmeric powder
2 teaspoons chili powder
2 tablespoons paprika
1 tablespoon sugar
1 tablespoon salt
1 2-inch piece ginger, minced
1 whole bulb garlic, minced

SALAD
1 mild onion, finely diced
1 cucumber, finely diced
2 vine tomatoes, finely diced
1 bunch coriander/cilantro, roughly chopped
1 teaspoon sweet tamarind paste
1 teaspoon chat masala spice mix
Juice of one lime

SERVING
6 pieces Kobez Lebanese flat bread, warmed
Mango chutney
Indian pickles
Mint cumin riata (mint sauce, yoghurt, fresh mint and cumin)

Crush the spices to a paste. Add more oil if needed to keep it at a spreadable consistency.

Divide the fish into 6 equal steaks and cover in the paste.

Wrap each steak individually in cling film and refrigerate for 24-48 hours.

Toss salad ingredients together and put aside.

Heat a frying pan with a tablespoon of oil. Fry the fish steaks on a medium heat for 3-5 minutes per side depending on the thickness. Fish will flake apart easily when ready and there will be no translucency on the inside.

Serve wrapped in flat bread with mango chutney, Indian pickles, and mint cumin riata on the side.
