Sizzling Pork Sisig

High tail it to Phoenix, Arizona where the Hey Joe truck brings an arsenal of traditional Filipino cuisine to the streets, firing off dishes such as sizzling pork sisig and deep fried pork belly.

BRAISED PORK
10 cloves garlic
3 tablespoons salt
1 ½ tablespoons sugar
1 teaspoon whole peppercorns
1 cup Filipino soy sauce
½ cup coconut vinegar
1 Pork Ear
1 Pork Jowl
½ Pork Tongue
½ Pork Snout
Water to cover

Place all braising ingredients in a large stockpot with pork parts and add enough water to completely cover the pork. Simmer on low heat for 1 ½ hours or until pork is soft but not completely tender. Remove pork and chill.


PORK SISIG
Braised Pork parts (above)
1 onion, diced
1 tablespoon ginger, chopped
5 cloves garlic, chopped
4 Bird’s Eye chili peppers, chopped
¼ cup Filipino soy sauce
2 tablespoons coconut vinegar
2 tablespoons calamansi juice
4 eggs
4 servings rice, cooked

Grill pork parts on a charcoal grill, preferably using lump charcoal, until skin is crispy and slightly charred, then refrigerate.

Small dice pork parts. In a large sauté pan, sauté onion, ginger, garlic, and chili’s for 1 minute. Add pork and sauté for 4 minutes. Add Filipino soy sauce, coconut vinegar, and calamansi juice.

Divide pork onto 4 pre heated fajita platters. Crack 1 egg on each platter and mix the egg and pork together. Serve atop your choice of rice
