Sam's Lobster Roll

In San Francisco, California knock on the door at Sam's ChowderMobile for some of the freshest street food by the bay, like a tasty Maine lobster roll and a perfect shrimp po'boy.

2 1.5 pound whole lobsters
4 ounces butter, melted
1/3 cup celery, chopped
4 brioche hot dog buns, with the sides trimmed

Bring a large pot of water to a boil and steam the lobsters for 12 minutes. Remove and cool the lobsters, and remove all of the meat from the shell. Chop the meat into generous chunks and set aside.

Heat a sauté pan with 1 ounce of the butter, and toast buns on both sides, removing when each side is light brown.

Add the rest of the butter, the celery and the lobster meat to the pan. Heat gently until warmed through, which should take 1-2 minutes. Be careful not to overcook the mixture, or the meat will lost its moisture. Divide the meat into four servings and place on each bun.

Yield: 4 servings
