Recipe from: Gorilla Cheese

There is no monkey-ing around in Hamilton, Ontario at the Gorilla Cheese truck, whose ooey gooey sandwiches will make you go ape wild with delight.

1 Granny Smith apple
1 tablespoon butter, softened
1 teaspoon mayonnaise
2 slices white bread
2 slices Jensen medium-aged cheddar cheese (or any high-quality cheese)
3 to 4 strips bacon, cooked
1 teaspoon Canadian maple syrup

Cut 3 slices of apple approximately 2mm thick. If they are to be set aside for longer than a few minutes, immerse them in a solution of water with a few squirts of lemon juice to keep them from browning.

Mix butter & mayo together into a smooth, uniform spread with no lumps. Spread evenly on one side of each slice of bread.

Put each slice of bread, butter-side down, into a heated pan over medium to medium-high heat. Lay one slice of cheese on each slice of bread.

On one slice of bread, lay the 3 slices of apple to cover the whole open face of the sandwich. Lay the cooked bacon on top of them, and pour your syrup to cover.

With a spatula, flip the piece of bread with just cheese over onto the other piece that is loaded with the bacon, apple and syrup, and press down on the sandwich. Cook until golden brown, and flip sandwich to cook other side to same color. Press down on sandwich if necessary, to bind the cheese with the ingredients and ensure that cheese is melting.

Remove from pan, slice sandwich in half, and serve.

Yield: 1 serving
