Spicy Thai Grilled Peanut Butter Sandwich

In Portland, Oregon The PBJ’s cart has redefined the classic sandwich. Tasty versions include orange marmalade and thai curry or goat cheese with kalamata olive bread.

1 cup organic Valencia peanuts, roasted
1 cup of organic Smokey Runner peanuts, roasted
1 tablespoon organic coconut oil
1 tablespoon sea salt

Blend all ingredients in a food processor until you get a silky texture.

2 slices challah bread
2 - 2 1/2 tablespoons of PBJ's Peanut Butter (above)
1 tablespoons sriracha
1 tablespoon fresh basil, diced
1 tablespoon curry powder to taste
2 tablespoons orange marmalade

Lightly butter both sides of bread slices. On one slice of bread, layer all ingredients in order listed. Close sandwich and grill until bread is golden brown on bottom. Flip sandwich and grill other side.

Yield: 1 serving
