Bacon Cheeseburger Dumpling

In Portland, Oregon The Dump Truck has overturned expectations of the traditional Chinese dumpling by stuffing them with tasty American classics like a bacon cheeseburger, eggplant lasagna and even good ol’ fashioned apple pie.

1/3 pound bacon, thin cut
½ red onion, diced
2 cups medium/sharp cheddar cheese, shredded
½ tablespoon salt
½ tablespoon pepper
½ pound lean ground beef
1 package dumplings skins (about 40)

Trim about half of the fat off of the bacon. Next, chop it into half-inch sized pieces and mix with the onion and cheese. Add salt and pepper and mix thoroughly by hand. Add the beef, mixing together thoroughly.

Divide mixture into dumpling skins and seal. Pan fry or boil until beef is fully cooked.

Yield: 40 dumplings
