Sizzling Watermelon

Recipe from: Tapa Tapa Truck

Head to San Antonio, Texas for appetizers unlike any other. The Tapa Tapa truck features such snacks as duck liver with deep-fried oatmeal cookies and eight-cheese mac & cheese with cheese crackers.

1 cup watermelon, cubed

¼ cup fresh mint leaves

1 packet watermelon poprocks

1 teaspoon salt

1 teaspoon sugar
1 teaspoon crushed Arbol Chile

1 tablespoon orange zest
Take a third of the mint and put it into an airtight container with the cubed watermelon. Refrigerate overnight.

Mix the salt, sugar, and Arbol Chile together.
Take remaining mint and chop finely.

Arrange watermelon on plate and season liberally with salt, pepper and Arbol Chile mix, then top with orange zest, mint, and poprocks. Enjoy ice cold.

Yield: 1 serving
