Wild Caught Salmon Salad

Head to Miami, Florida to get a healthy dose of delicious at the Health Nut on Wheels truck where best sellers include a maple-dijon salmon filet on a mixed green bed.

1/2 cup organic Tamarin soy sauce
1/4 cup Dijon mustard
1/4 cup organic grade A maple syrup
2 tablespoons ground pepper
1 tablespoon sea salt
2 tablespoons of sesame seeds
3 pounds Alaskan Wild Salmon Fillets, cut into 7 to 8oz portions (skin off)

Combine all ingredients except for salmon fillets in a mixing bowl. Whisk together.

Place each fillet of salmon into the sauce and remove after 30 to 40 minutes.

Pre-heat a flat skillet to medium-high heat. Place salmon and sear each side for 4 to 6 minutes (more for thicker fillets and less for thinner) also, depending on personal preference for doneness. Before removing from skillet, brush each side of the fillet once more with the soy, maple sesame glaze. Sear for a few more minutes to brown the applied glaze and remove.

Serve Glazed Salmon over your choice of the following:

SALAD (recipe not included)
A bed of crispy greens including baby greens, spinach and kale with tomato, avocado and micro greens


VEGETABLES (recipe not included)
Sautéed veggies in coconut oil. Veggies include zucchini, squash, asparagus, mushrooms & multi-colored bell peppers & served with a side of greens, tomatoes & avocados.

Yield: 6 to 8 servings
