Jerk Chicken Sandwich

Hit the streets of Edmonton, Alberta for gourmet sandwiches at the Drift truck such as a Vietnamese Pork Belly with pickled carrots and daikon radish and a Caribbean Jerk Chicken with charred pineapple and lime coleslaw.

JERK SAUCE
3 scotch bonnets, roughly chopped
10 cloves garlic, roughly chopped
2 yellow onions, roughly chopped
2 thumbs ginger, rough chopped
1/2 fresh pineapple, cleaned, cored and chopped
4 tablespoons All Spice
3 teaspoons nutmeg
4 tablespoons dried thyme
1/2 cup golden sugar
2 cups white vinegar
1/2 cup soy sauce
4 limes’ juice
1 cup olive oil

Combine scotch bonnets, garlic, onion, ginger and pineapple in a large bowl.

In a separate bowl, mix together all spice, nutmeg, dried thyme and sugar, then add to the vegetable and pineapple mixture.

In another separate bowl, mix together the vinegar, soy sauce and limejuice.

Using a food processor, mix together the pepper & spice mix, slowly adding the liquids and blending until smooth. Lastly drip in olive oil, continuing to mix. Yields 2 liters of sauce.

JERK CHICKEN
1 whole chicken
Jerk Sauce (above)

Debone chicken into 8-piece cut, and cut the breasts in half.

Mix 2 cups of Jerk Sauce with the raw chicken, and place chicken pieces on the grill, turning and flipping it once. Let it char nicely, then remove from grill and coat with approximately 1 cup of Jerk Sauce.

Roast pieces in oven at 375 degrees Fahrenheit to finish, cooking for 20 minutes or until the mean has an internal temperature of 160 degree Fahrenheit.

Allow meat to sit until it is cool enough to handle, and then pull meat off of the bone and shred.

GRILLED PINEAPPLE
1 whole pineapple, clean & cored
1 ½ tablespoons olive oil
Salt to taste

Cut pineapple into 4 pieces, lengthwise, and then toss pieces in olive oil & salt. Grill until slightly charred, then let cool and slice thinly.

LIME SLAW
5 cups carrot, shredded
5 cups green cabbage, shredded
5 red cabbage, shredded
5 mayo
5 limejuice

Combine carrot with shredded green and red cabbage. Mix with mayonnaise & limejuice.

Heat some Jerk Sauce in a pan or on a flat top. Add chicken until warm, and then place on bun and top with 4-5 slices of pineapple and a helping of lime slaw.
