Spanish Burger

4 1/3-pound beef patties
4 brioche buns
4 tablespoons soft goat cheese
1 jar roasted red peppers, cut into ½-inch strips
4 tablespoons Kalamata olives, pitted and diced
1/4 cup pine nuts
1/2 cup honey

Combine pine nuts and honey, and blend in food processor. Set aside until it becomes room temperature.

Pan-fry the burger patties on medium-high heat until seared and slightly crisp (about 2 minutes per side.) Cook longer for medium-well to well doneness.

Without cleaning the pan, place the cut buns in the pan until they're warm and toasted.

Remove buns from pan and place burger patty on each bun. Next, smear a tablespoon of the goat cheese on each burger patty, and then top each burger with a tablespoon of diced Kalamata olives and 3 or 4 strips of the roasted red peppers.

Spread room temperature honey and pine nut mixture on the warmed bun top.

Yield: 4 servings
