Kick-Ass Rice

Recipe from: Le Tigre Cuisine

In Vancouver, BC Le Tigre truck’s modern Asian cuisine has the locals going wild. Favourites include Deep Fried Beet Fries, Sake infused Rice Bowls with Poached Egg and Pork Belly, and a Roast Chicken Sandwich with sesame chili sauce and fresh greens.

3 1/3 cups Japanese sushi rice
2 teaspoons garlic, minced
2 teaspoons ginger, finely chopped
1/3 cup sake
2 tablespoons hondashi
3 cups water or 3 cups dashi
8 teaspoons unsalted butter
2 teapsoons salt

Wash rice until all starch is rinsed off. Add garlic, ginger, sake, water/dashi, butter and salt and place in a rice cooker for about 30 minutes or until done.

10 eggs

Poach eggs in water at 65 degrees Celsius for 45 minutes and remove from water.

1/3 bunch mint, coarse chop
1/3 bunch cilantro, coarse chop
1/3 bunch scallions, cut finely
1/3 bunch basil, coarse chop

Combine all ingredients in large bowl and mix well.

Garnish (above)

Scoop rice into a bowl and add desired amount of herbs. Top with egg.

Yield: 10 servings
