Surf and Turf Satay

Cruise on down to Orange County, California for sizzlin’ Singaporean fusion at the Chomp Chomp Truck where best-sellers include a Spicy Soft Shell Crab Sandwich with Lemongrass Vinaigrette and Japanese Sweet-Potato Chips.

4 tablespoons cumin
2 tablespoons coriander
2 tablespoons Chinese white pepper
1 tablespoon Fennel, ground
1 teaspoon allspice
1 teaspoon nutmeg
1/2 teaspoon clove

Combine all ingredients. Mix well.

1 stalk lemongrass
1/2 cup ginger, diced
1 tablespoon galangal, peeled & diced
5 cloves garlic
4 Thai chilies
4 Kefir lime leaves
2 cups Ketchup
1/3 cup brown sugar
1/4 cup dark soy sauce
2 tablespoons Spice Mix (above)

Combine all ingredients and mix well.

4 ounces unsalted butter
2 tablespoons Sambal Chili

Heat the butter. Add the sambal chili and mix. Set aside.

2 stalks lemongrass
4 tablespoons ginger
1 tablespoon galangal
10 cloves garlic
10 shallots
8 Kefir lime leaves
8 Thai chilies
1/4 cup salted soybeans
1/4 cup canola oil
2 tablespoons spice mix
2 cups Ketchup
1/2 can roasted peanuts, finely ground
12 ounces palm sugar, melted in 1 gallon of water
1/4 cup dark soy sauce
1/2 cup pineapple juice

Place lemongrass ginger, galangal, garlic, shallots, kefir lime leaf, Thai chilies and soybeans into a food processor. Blend well.

Heat canola oil in heavy saucepan and sauté spice mix. Add lemongrass mixture, followed by remaining ingredients. Mix together until sauce is thickened.

12 ounces Kobe beef, cut into thin slices, 2-inches long
24 8-inch bamboo skewers
Beef Marinade (above)
12 tiger shrimp, shelled and deveined
Sambal Chili Butter (above)
4 servings rice (your preference)
Peanut Sauce (above)

Thread beef slices on 12 bamboo skewers. Brush beef skewers with beef marinade.

Skewer shrimp, 3 shrimp per skewer. Heat grill and place the shrimp on the grill, basting with sambal butter. Cook until browned and cooked through.

Place beef skewers on the grill and cook until browned.

Serve with rice and your choice of vegetables. Ladle peanut sauce on top and enjoy.
