Pacific Rim Chowder

Red Fish Blue, a stationary retrofitted shipping container in Victoria, British Columbia’s Inner Harbor serves a variety of local and fresh seafood dishes.

2 tablespoons olive/canola mix
1 can corn (save liquid for after the sauté)
1.5 cups diced onion
1.5 cups carrot
1.5 cups celery
1.5 cups parboil potatoes
1 teaspoon toasted ground cumin
2 teaspoons toasted ground coriander seed
2 teaspoons sea salt and pepper mix
1 bunch cilantro stalk minced
4 tablespoons crushed garlic
8 tablespoons sweet-chili sauce
4 tablespoons chipotle puree
3 cans coconut milk (small)
1 can crushed tomato
2 tablespoons hot sauce
2 tablespoons L&P
Cilantro leaves
Green onion

Sauté all the dry ingredients until the veggies are soft, then add wet ingredients and simmer for 15 min. Garnish with cilantro and green onion.

Yield: 8 servings
