Apple & Pecan Raclette

Apples:
5 medium apples (McIntosh) cut into 2 cm wedges
2 tbs canola oil
3 tbs salted butter
40 gr. brown sugar
Pinch of salt
Pinch of ground nutmeg

Pecans:
½ cup of pecans (roughly chopped)
2 tbs of butter
5 tbs brown sugar
A generous pinch of Fleur De Sel (good quality sea salt)

Potatoes:
350g potatoes
2 tbs olive oil
salt and pepper

Put the butter and oil in a skillet over medium-high heat. Allow the butter to melt and add apples. Saute the apples to coat with butter mixture. Add the brown sugar with a pinch of salt and nutmeg. Cook until caramelized (roughly 8 to 10 minutes).

Melt the butter in a sauce pan and add brown sugar. Add the pecans and mix all together. Saute for 30 seconds and add Fleur De Sel. Once caramelized, spread evenly and let the mixture cool on a roasting tray.

Peel and slice or cube the potatoes. Add olive oil to frying pan, add the potatoes (season with salt) and saute on a medium-high heat until cooked and golden. Adjust seasoning to taste

SERVING DIRECTIONS:
400g Raclette cheese
Preheat oven at 450 degrees F

Put the fried potatoes in the bottom of a roasting tray. Add the apples and top with the pecans. Spread the Raclette cheese in slices. Grill for 8 minutes or until melted.
