The Caprese

Recipe from: The Jalopy

Head to Austin, Texas for some serious Italian cuisine at the Jalopy truck where they serve their dishes down a slide off the back of an 18 wheeler!

Ingredients:

For Pesto:
2 bunches Italian flat-leaf parsley
4 cloves garlic
1 tablespoon lemon juice
10 tablespoons olive oil
1 tablespoon course cracked pepper
1 teaspoon toasted coriander seeds
Zest of 1/2 lemon
Sprig of thyme
Sprig of oregano
Salt to taste

For Sandwich:
2 slices of a thick cut French bread (sourdough or another quality sliced bread can be substituted)
1 ripe heirloom tomato
1.5 teaspoons parsley salad (finely chopped parsley, garlic, pepper, and scallions)
1 tablespoon fresh mozzarella

Instructions:

For the pesto, finely chop the parsley and garlic. Add the zest, herbs, lemon juice, and dry ingredients to a bowl and mix. Combine with the parsley and garlic. Blend until a fine paste, while slowly adding olive oil. After the pesto is completed throw your nice slices of bread on the grill. Layer all of the sandwich ingredients on one slice of bread mozzarella first. After about 5 minutes the mozzarella should be melted and the bread should have a nice crisp with some darker caramelization. Put the other slice on top, and enjoy!
