The Nut Burger

Feed Your Hole is a deli truck that is part band tour bus and part bomber air plane, serving up old school BBQ recipes out of East Manhattan.

1 teaspoon salted butter
1/2 pounds centre-cut bacon, cooked
8 oz ground brisket
4 oz ground top sirloin
4 oz ground chuck
Coarse sea salt
1 teaspoon extra virgin olive oil
2 brioche buns
8 tablespoons peanut butter

Dice the bacon into small pieces. Cook in the butter in a non-stick pan until brown.

Have the local butcher grind the meat together. Form two patties. Season each side with the sea salt.

Preheat a cast iron pan, coat with the olive oil. Heat until hot but not smoking. Cook the burgers 4-5 minutes on each side for medium doneness.

Put 2 tablespoons of peanut butter on each side of the brioche buns and add the bacon to the top half of the Brioche bun.

When the steak burgers are done sprinkle a little coarse sea salt then put it all together and wait a minute for it to melt the peanut butter.
