Pimento Mac N Chee

Recipe from: Grilled Cheeserie

Drive to Nashville, Tennessee to chow down at The Grilled Cheeserie which emphasizes the use of locally sourced ingredients.

1 clove garlic smashed and chopped
1 teaspoon hot sauce
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon fresh cracked black pepper
1 teaspoon kosher salt
1 cup mayonnaise
1/2 cup shredded smoked cheddar
1/2 cup shredded cheddar
1 cup macaroni pasta, cooked and cooled
1 small roasted bell pepper, diced
8 slices bread, buttered generously
1 tomato, sliced
4 strips bacon, cooked and diced
1 cup smoked cheddar

In a food processor, blend together garlic, hot sauce, cayenne, paprika, black pepper and kosher salt. Add mayo and shredded cheese, and pulse until combined.

Put mixture in a bowl and fold in cooked macaroni pasta and roasted red bell pepper.

Sandwich Components: 2 pieces country white bread (We use local Silkie's bread) buttered generously 1 piece of bacon diced and cooked (We use Benton's bacon) 2 thick slices of tomato 2 oz. smoked cheddar

Heat a non-stick griddle to 300 degrees Fahrenheit. For each sandwich, layer 1 cup of the mac n’ cheese mixture, 2 slices of tomato, 1 strip of bacon, and 1/4 cup of smoked cheddar between 2 buttered sliced of bread. Grill on both sides until golden brown.

Yield: 4 servings
