Beef Heart Skewers

1 pound fresh beef heart
1/4 cup sherry vinegar
1/2 cup extra virgin olive oil
2 tablespoons whole grain mustard
2 cloves garlic, minced
2 pinches Kosher salt
Black pepper, coarse ground

Soak approximately 20 bamboo skewers in cold water before you start your prep, in order to help keep the skewer from burning on the grill.

Trim the beef heart of all excess veins, membranes, or fat. Cut into the longest strips possible, about 1/8 of an inch thick.

Carefully skewer the heart pieces on the bamboo pieces, weaving it and stretching it out to reduce the ruffles in the heart. Place in a dish in order to marinate. Set aside.

To make the marinade, add the garlic, garlic, sherry vinegar, salt, and pepper in a bowl. Whisk to incorporate. Pour the marinade over the heart skewers, and let sit for at least 10 minutes.

Preheat the grill to very high heat (you can also use a cast iron pan or grill pan over high heat).

Place the heart skewers on the high heat grill or pan, and cook for approximately 1-2 minutes on each side. Flip when marked and colored nicely.

Serve warm, with a drizzle of olive oil and an optional sprinkling of fresh herbs.

Yield: 20 skewers
