Thai Pork Tacos

Treat yourself to some fantastic fish tacos in Hawaii at Camille’s on Wheels.

PORK:
2 pounds pork shoulder or butt
3 tablespoons Thai red chili paste
6 cloves garlic, peeled
1 tablespoon ginger, grated
8 Kaffir lime leaves
4 stalks lemongrass cut into 1-inch pieces (light part only)
1 can coconut milk
1 cup water
Salt to taste (approximately 2 teaspoons)

Place all ingredients in large Dutch oven and cover tightly. Bake at 300 degrees Fahrenheit for 4 hours or until fork tender.


SLAW:
6 cups shredded cabbage
1 cup mayo
1 tablespoon mirin
1 tablespoon agave syrup

Mix just prior to serving to ensure crispness.


PICO DE GALLO:
4 tomatoes, finely chopped
1 onion, finely chopped
4-6 jalapenos, minced

Mix well.


TACOS:
Pork
Slaw
Pico de Gallo
Corn tortillas
Cilantro

Warm corn tortillas on skillet and place approximately 3 tablespoons of shredded pork on top. Top with slaw, Pico de Gallo and cilantro.

Yield: 6 servings
