Pork Gisantes

Ride to Hawaii to feast on Filipino fusion food at the Flip’t Out truck.

4 pounds pork shoulder or butt, cubed
1 pound pork belly, cubed
3 large onions, chopped
1 tablespoon salt
10 garlic cloves, minced
4 cups water
5 tablespoons patis (fish sauce)
5 bay leaves
6 cups tomato sauce
1-1/5 cups tomato paste
4 tablespoons sugar
2 cups pimento
1 pound frozen peas
1 pound frozen carrots

Add pork, onion, salt, and garlic to pot. Brown on medium heat.

Add water, patis, and bay leaves. Simmer for 20 to 30 minutes.

Add remaining ingredients. Simmer for an additional 30 minutes.

Spoon on top of your favourite hot dog bun and enjoy.

Yield: 8 servings
